Borscht - Russian beetroot and vegetable soup
Slice Beetroot, carrot, celery and red onion into batons
Bring all the veg to the boil with veg or beef stock. Add a spoonful of sherry vinegar and demerera sugar, then simmer until veg is tender. Serve with creme fraiche and chopped chives or parsley.
